There are still people in Millbrook who mount horses and chase around little foxes on hundred-acre estates. Many of them unwind at Cafe les Baux, an enchanting little husband-wife bistro in the center of the diminutive village. There are only 12 tables divided into two rooms, so you have to gallop into town to get a good one, particularly on weekends. The chef-owner is from Brittany but his cooking style is more southern: moules frites (steamed mussels with French fries), duck breast with port wine sauce and potatoes gratin, salmon with mustard sauce and French onion soup. Servers are skilled and affable. The small, mostly French wine list carries a number of quality selections under $30. -Bryan Miller
