Opened in 1987, Xaviars is the Hudson Valley gem that put Peter Kelly on the map, and in some ways, it continues to define his brilliantly evolving career. The 40-seat dining room is done in soft and comforting tones, with flattering lighting and well-spaced tables. Service is seamless and unobtrusive. Emblematic of Kelly’s approach at all five of his distinctive restaurants, the food is as local as possible and prepared in a manner allows his bold, stratified flavors to trump theatricality. The dazzling wine list carries some interesting artisanal producers as well as an enticing range of California chardonnays. A five-course chef’s menu, paired with five wines, is $100. Or, if you have a lot of time on your hands, there is a 10-course “global” tasting, minus wine, for $90. -Bryan Miller
